Sous vide cookers are appliances that slowly heat food at low temperatures. Low-temperature cooking is being called the fourth cooking method, after baking, steaming, and boiling, and is becoming more and more widespread. Low-temperature cooking keeps food tender, in particular. Cooking at a low temperature reduces the coagulation of proteins and the bag keeps moisture from leaking out, resulting in soft and tender food.
Low-temperature cooking is simple with the right tools. Put the ingredients and seasoning in a plastic bag and remove all of the air in the bag. The bag goes into a pot with the cooking device. No advanced skills are required. You can leave your sous vide cooker for a long period of time, letting it do the work for you at the temperature you decide. There is no need to carefully watch the device. The temperature and time are controlled automatically.
In getting the taste you prefer, it may take some trial and error initially with sous vide machines. Different devices produce different results even with the same settings, and each ingredient has its own strengths and weaknesses, meaning results can vary. All in all, the time and temperature settings are up to you, even when manufacturers provide you with recipes designed for the machine. Our tastes are all different, so even if you follow the directions, you may still need to make some adjustments to your liking.
Here are the points to keep in mind when choosing the best Sous Vide Cookers.
Anova's Sous Vide Precision Cooker Pro stands out with its short preheating time, working at a powerful 1200 watts. We measured the Sous Vide Precision Cooker Pro as taking only 12 minutes to bring 21 cups (five liters) of water to 130 degrees Fahrenheit, after taking only a few seconds to fully preheat.
In comparison, it took some of the other products working at power levels lower than 1,200 watts close to 20 minutes to bring the water to the same temperature. The fast preheating speed allows you to get to cooking right away, reducing the overall time. This makes it perfect when preparing meals for your busy day.
This device uses screws for mounting, providing a high degree of stability. Screw-type mounting also lets you use this sous vide machine with thick or uneven pots. This allows you to use any pot for cooking, as long as it has the capacity required.
Testers commented that steak cooked using the Sous Vide Precision Cooker Pro had a well-balanced texture, staying tender and juicy while maintaining just the right level of elasticity. In addition, Anova products come with their own dedicated apps, with general recipes and recipes provided by users. With so many different recipes to choose from, you should be able to find something that matches your own taste.
In testing, some of the chicken that we prepared with the Sous Vide Precision Cooker Pro had parts that were a little dry, so it's worth noting that some time and temperature adjustments might be necessary for better results.
The chicken we prepared with Dartwood's Smart Sous Vide Precision Cooker came out moist, tender, and juicy. Some of the testers felt it was good enough to eat without any sauce or additional seasoning. Chicken breast can easily dry out when you're cooking it, but the Smart Sous Vide Precision Cooker resulted in chicken juicy enough to taste good with only salt and pepper. This makes it a good choice for health-conscious individuals interested in building muscle.
Although some of the other sous vide machines were able to cook chicken well, this was the best out of everything we tested. It also has accurate temperature levels and a short preheating time.
This sous vide machine connects to the pan using a clip. Clips are easier, as you can just attach it to the edge of the pot, but it might not mount securely depending on the thickness and shape of your pot. Take care to ensure that your device attaches safely to the pot you have.

Anova's Sous Vide Precision Cooker Pro uses a lot of power, at 1,200 watts. It includes an app, connecting your phone with a wide variety of recipes. The Sous Vide Precision Cooker Pro has a screw-type mount, ensuring your unit fits securely to the pot. This sous vide machine received a high rating in temperature accuracy. At the completion of preheating, the difference between the set temperature and the actual temperature was only 32.18 degrees Fahrenheit, and even after one hour, the difference was only 32.36 degrees Fahrenheit. This means the actual temperature is practically the same as the set temperature, contributing to peace of mind when you leave your food cooking.
The Sous Vide Precision Cooker Pro also received high scores for preheating. It only took 12 minutes and 37 seconds for the device to reach 130 degrees Fahrenheit, which is quite fast. A short preheating time means less time spent cooking. Steak cooked with this sous vide machine received positive ratings from testers. The steak was reported as having a balance of tenderness and firmness, with comments such as, "It's good enough to eat again and again," and "This is good enough to serve to guests."
Chicken, on the other hand, was not rated as highly. The chicken was reported as tender, but some testers said it was partially dry. Adjusting the cooking time and temperature may solve these issues when cooking at home. Though it may take some adjustment to perfect chicken, the fast preheating and mounting stability make this a good sous vide machine for daily use. With good cooking results and ease of use, we consider this a top choice.

Time and temperature adjustment might improve its tenderness.
While the steak may need adjustment, chicken cooked using the device was reported as tender and juicy. Testers said the chicken was good enough to eat as is, without additional seasoning or sauce. This sous vide machine is quick-heating and produces very good chicken breast in particular, which often becomes dry when cooked using other methods. Anova's Nano Sous Vide Precision Cooker can be operated from your phone with the use of an app. The Nano Sous Vide Precision Cooker is very precise in terms of temperature. The difference between the set temperature and the actual measured temperature was only 32.18 degrees Fahrenheit, both at the completion of preheating and after one hour. This means that the temperature is maintained almost exactly as set, making the device particularly trustworthy when left to cook over a long period of time.
Though the set temperature was accurate, preheating was a bit of a concern. It took 19 minutes and 20 seconds to reach 130 degrees Fahrenheit, which is a little long compared to other models, and long enough to be potentially inconvenient if you are in a hurry. We tested the steak first. It was tender, but slightly lacking in moisture. The testers recommended eating it with sauce. The chicken, on the other hand, received high ratings, and was reported as tender, with a good mouthfeel, and satisfying.

Greater Goods's Kitchen Sous Vide is operated by rotating or clicking a dial, with no LCD panel. The Kitchen Sous Vide received a high rating for temperature accuracy. Temperature testing showed a difference of 34.34 degrees Fahrenheit between the set temperature and the actual measured temperature after preheating, but after one hour, the difference was reduced to 32.9 degrees Fahrenheit. The preheating speed was also rated favorably. Running at 1,100 watts, it took only 12 minutes and 53 seconds to reach 130 degrees Fahrenheit, which is considerably fast, meaning a smooth start to the cooking process.
However, there were issues in the cooking quality tests. Steaks were cooked unevenly, with extremely juicy areas and parts that felt dry. Many testers mentioned that it was difficult to bite through.
