However, in order to get the most benefit from honey, it should be raw and unfiltered. Heat treating can reduce honey’s health benefits, and filtering it removes healthful pollen bits. Raw, unfiltered honey is often thick and crystalline at room temperature. It should have the consistency of peanut butter and be quite opaque.


On the other hand, if you’re just looking for a slightly better sugar alternative, heat-treated, filtered honey is less likely to have bacteria that may be harmful for young children.

Honey is directly derived from the nectar and pollen that bees eat, so naturally, honeys from various flowers will differ slightly. The most healthful - and probably most well-known - variety is manuka honey from New Zealand. 

This honey comes from the flowers of the manuka bush and has bioactive properties said to alleviate upper respiratory issues, ease digestive ailments, and boost the immune system. Several studies have shown it to quite effective in killing bacteria and healing skin wounds. However, manuka honey can be pretty expensive.


Other types of honey, while not shown to have quite the same benefit-boosting qualities of manuka, do have differing flavors that may make you like one type better than another. Some common varieties include acacia for a classic “honey” flavor, orange blossom that's mild and citrus-scented, lightly minty eucalyptus, and sweet and floral clover.

Honey has a strong flavor so when you use it in baked goods make sure you choose a lighter-colored honey. The darker the honey, the stronger its taste. You’ll want to choose a light-colored honey to keep the sweetness as neutral as possible.


The syrupy product is also sweeter than sugar so you'll want to make sure you use less of it when substituting it in a recipe. A good rule of thumb is to use 3/4 a cup of honey per cup of sugar.
